How do you create your very own special mixed salad?

I take the elevator down to the café and order the special mixed salad that has lots of avo and olives and toms and lime dressing, but I tell them to leave out the chicken. I’m not a vegetarian, but I hate the kind of dry plain boring gaggy chicken places dump in salads. If I’m going to eat chicken, it has to be juicy and tasty, preferably with crunchy skin (not fried though), just like Mommy used to make.
